Baked Rigatoni and Sausage

Rigatoni pasta in a hearty sausage tomato sauce topped with golden brown mozzarella cheese.

Ingredients

Boil rigatoni pasta to al dente. Reserve pasta water then drain.

Meanwhile, cook sausage in oil until cooked through and lightly browned. Remove.

Sauté diced onion until softened. Add minced garlic and sauté 30 seconds.

Add tomato paste and cook for 1 minute, stirring often.

Pour in crushed tomatoes, brown sugar, Italian seasoning, salt, and pepper.

Add the cooked sausage back to the pan and mix to combine.

Toss the pasta and half of the pasta water in the sauce. Add more pasta water if needed.

Top with shredded mozzarella and grated parmesan cheese.

Bake 30 minutes or until golden brown and bubbling.

Let the pasta rest for 10 to 15 minutes then top with fresh parsley and serve.
