Baked Zucchini Chips

Thinly sliced zucchini chips are lightly breaded with Italian seasoned panko bread crumbs and baked to golden brown perfection!

With a knife or a mandoline, slice zucchini into 1/8 inch thick rounds.

Season panko bread crumbs with parmesan cheese, basil, oregano, garlic powder, salt and pepper.

Lightly coat the zucchini chips with flour, shaking off any excess.

Coat the floured zucchini with the whisked eggs, allowing excess egg to drip off.

Cover the zucchini chips with the seasoned panko crumb mixture, pressing the breading on to help it stick.

Lay the breaded zucchini chips in a single layer on wire racks inside baking sheets. Lightly drizzle with olive oil.

Bake, flipping half way through, until golden brown and crispy.

Grate extra parmesan on top and serve with your favorite dipping sauce. Enjoy!
