Coffee Cake with Cinnamon Crumb Topping

Ingredients

*All-purpose flour *Granulated Sugar *Baking Powder *Salt *Unsalted Butter *Eggs *Canola Oil *Vanilla Extract *Whole Milk *Cinnamon

Whisk together sugar, cinnamon, and salt. Set aside.

Mix together sugar, flour, cinnamon, salt, and melted butter. Set aside.

Whisk together flour, baking powder, and salt.

Cream together softened butter and sugar until light and creamy.

Mix in the eggs, oil, and vanilla until everything is well combined.

Mix in 1/3 of the dry ingredients just until they are combined.

Mix in 1/2 of the milk just until it is fully mixed in.

Continue with another 1/3 of the dry ingredients, then the other half of the milk, and finally the rest of the flour mixture.

Scoop half of the cake batter into a buttered and floured 9-inch springform pan.

Sprinkle the cinnamon sugar mixture evenly over the cake batter.

Spoon the rest of the cake batter on top and carefully spread it out into an even layer.

Crumble the cinnamon streusel over the top of the cake.

Bake at 350 degrees F for 50 to 60 minutes or until a toothpick comes out with only a few moist crumbs.

Allow the cake to cool for 10 minutes then release the springform pan. Cool for another 2 hours before serving.
