Coffee Cookies

Soft chewy coffee-flavored cookies studded with semi-sweet chocolate chips.

In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.

In a separate bowl, cream together unsalted butter, light brown sugar, and espresso powder until light and airy.

Add an egg and vanilla extract and beat until they are well incorporated.

Add the dry ingredients to the bowl with the wet ingredients and mix just until combined. Avoid overmixing the dough.

Mix in semi-sweet chocolate chips just until they are evenly distributed.

Cover the bowl and chill the dough in the fridge for at least 2 hours.

Preheat the oven to 350 degrees F. Scoop the dough into balls and place on a parchment-lined baking sheet. 

Bake the cookies for about 12 minutes or until the edges have set but the centers are still a bit doughy.

Allow the cookies to cool on the baking sheet for 2 minutes then transfer them to a wire rack to finish cooling. Enjoy!
