Creamy Pasta Salad

Loaded with roasted corn and zucchini, fresh cherry tomatoes, and red onion then tossed in a creamy tangy mayo dressing for the perfect side dish.


*Elbow noodles *Corn *Zucchini *Cherry Tomatoes *Red Onion *Mayo *Lemon Juice *Salt *Sugar *Pepper *Olive Oil

Boil the pasta until al dente. Drain, rinse under cold water, and let it sit to dry.

Toss fresh corn and zucchini in oil and salt and broil until lightly charred.

In a large mixing bowl, whisk mayo, lemon juice, salt, sugar, and pepper.

Add the pasta, roasted corn and zucchini, cherry tomatoes, and red onion.

Stir until everything is well combined and coated in the dressing.

Serve immediately or chill for several hours or overnight.
