Dutch Oven Chicken Stew

This hearty Chicken Stew is absolutely loaded with chicken, potatoes, carrots, and celery in a rich flavorful broth.

Ingredients

*Chicken *Baby Potatoes *Carrots *Celery *Onion *Garlic *White Wine *Flour *Chicken Broth *Thyme *Bay *Parsley *Butter *Salt & Pepper

Season diced chicken and sauté in butter in batches until lightly browned. Remove to a plate and set aside.

Add more butter to the pot and sauté diced carrots, onion, and celery. Add minced garlic.

Slowly pour in white wine scraping the bottom of the pot as you pour. Simmer to reduce by half.

Add the flour and cook for 1 minute or until it is fully incorporated.

Slowly pour in the chicken broth stirring as you pour. Add the potatoes, thyme, and bay leaf.

Return the chicken and any juices to the pot. Simmer gently for 25 to 30 minutes.

Remove the bay leaf and stir in fresh parsley. Adjust the salt and pepper as needed.

Serve with fresh bread or crackers and enjoy!
