Gruyére Potatoes Au Gratin

Place thinly sliced potatoes in an even layer in a baking dish.

Sauté thinly sliced shallots in melted butter until softened, about 5 minutes.

Add minced garlic and sauté for another 30 seconds.

Add flour to the butter and shallots and stir to combine. Continue cooking for 1 minute, stirring often.

Slowly pour in the milk whisking the whole time. 

Add the salt, pepper, and fresh thyme. Allow the sauce to simmer for 1 to 2 minutes or until it slightly thickens.

Pour the cream sauce over the potatoes. Use two forks to spread the sauce between some of the potatoes. Cover and bake 1.5 hours.

Uncover and top with freshly grated gruyére cheese. Bake uncovered for another 30 minutes.

Broil for 2 to 3 minutes until golden brown and bubbly. Allow the potatoes to rest for 20 minutes before serving.
