Herbs de Provence Chicken and Potatoes

You'll love this easy one-pot chicken and potato dish. Herbs de Provence chicken is roasted on top of potatoes, shallots, and garlic in a thyme-infused cream sauce.


*Chicken Thighs *Herbs de Provence *Garlic Powder *Olive Oil *Butter *Baby Potatoes *Shallots *Garlic *Thyme *Chicken Broth *Heavy Cream *Salt *Pepper

Toss chicken with herbs de Provence, garlic powder, salt, pepper, and olive oil.

Coat the bottom of a  baking dish with melted butter then top with potatoes, shallots, garlic, thyme, salt, and pepper.

Whisk together chicken broth and heavy cream then pour it over the potatoes and veggies.

Place the chicken thighs on top of the potatoes avoiding pressing them into the liquid.

Bake for 50 to 60 minutes or until the chicken in golden brown and the skin in crispy.
