Lemon Dill Salmon with Fennel and Potatoes

Flaky lemon dill salmon is roasted over potatoes and fennel to make a delicious & healthy meal. 

First, prepare the fennel by removing the tops. Then, cut the fennel and potatoes into wedges.

Place the fennel and potatoes in a baking dish and toss with olive oil, salt, and pepper.

Bake at 400 degrees F for about 30 minutes or until they start to soften and brown.

Meanwhile, prepare the salmon filets by coating them in oil, sprinkling on salt, pepper, and fresh dill, and topping with lemon slices.

Place the prepared salmon filets on top of the roasted fennel and potatoes.

Bake for another 8 to 12 minutes or until the salmon becomes flaky.

This easy meal is perfect for a healthy weeknight meal but special enough for date night!
