Loaded Mashed Potatoes

These creamy mashed potatoes are loaded with bacon, cheese, and green onions. All the best parts of twice baked potatoes without the hassle!

Ingredients

*Yukon Gold Potatoes *Bacon *Cheddar Cheese *Green Onions *Milk *Sour Cream *Butter *Salt *Pepper

Place the prepared potatoes in a large pot with enough water to cover them. Boil until cooked through and soft. Drain.

Meanwhile, place the diced bacon in a large skillet. Cook them over medium heat until crispy and the fat has rendered. Transfer to a paper towel-lined plate.

Place the pot you cooked the potatoes in back on the stove over low heat. Warm the milk, sour cream, and butter until the butter has melted.

Using a potato ricer or masher, mash the potatoes into the pot with the warmed milk.

Mix in the crispy bacon, half of the shredded cheddar, sliced green onions, salt, and pepper.

Transfer the mashed potatoes to a baking dish. Top with the remaining cheddar cheese.

Bake for 30 minutes or until the mashed potatoes are warmed through and the cheese has melted.

Serve warm and enjoy!
