Mediterranean Farro Salad

Tender chewy farro tossed with veggies and herbs in a tangy red wine vinegar dressing and then topped with creamy salty feta.


*Farro *English Cucumber *Cherry Tomatoes *Sun-Dried Tomatoes *Red Onion *Kalamata Olives *Parsley *Mint *Red Wine Vinegar *Extra Virgin Olive Oil *Feta

Rinse the farro then place it in a saucepan with salt and water. Bring to a boil then simmer until tender and chewy. Drain.

Add the still-warm farro to a bowl with the veggies, herbs, vinegar, and oil.

Toss until everything is well combined. Cover and chill 4 hours or overnight.

Give the farro salad a good toss then top it with crumbled feta or serve the feta on the side. Enjoy!
