Baked Chicken Tacos

These Baked Chicken Tacos are loaded with creamy refried beans and chopped spicy marinated chicken then topped with freshly shredded Colby Jack cheese.

Ingredients

*Chicken *Chipotle Peppers in Adobo *Garlic Cloves *Chili Powder *Cumin *Smoked Paprika *Dried Oregano *Salt *Pepper *Olive Oil *Onion *Cilantro *Hard Taco Shells *Refried Beans *Colby Jack Cheese

Cover chicken in homemade marinade and keep covered in the fridge for 30 minutes or up to 1 day.

Heat oil in a skillet over medium-heat. Sauté diced onions until lightly browned.

Add the chicken to the pan and cook, covered, for 8 minutes. Flip and cook, uncovered, for another 6 to 8 minutes.

Remove the chicken from the skillet and chop into small bite-size pieces.

Add 1/4 cup of the marinade and 1/4 cup of water to the hot skillet and simmer for at least 5 minutes or until the sauce thickens.

Add the chicken and cilantro to the skillet and toss with the sauce.

Spread a spoonful of refried beans into the bottom of each taco shell.

Evenly divide the chicken between the taco shells.

Generously top each taco with freshly grated cheese.

Bake for 5 minutes or until the cheese is melted.

Add your favorite toppings and enjoy!
