Peach Cobbler

Ripe peaches tossed in sugar and topped with a spiced biscuit-like cobbler topping. Serve warm with a scoop of vanilla ice cream for the ultimate summer treat!

Ingredients

*Peaches *Sugar *Cornstarch *Flour *Baking Powder *Cinnamon *Cardamom *Butter *Milk *Egg *Salt *Turbinado Sugar  (optional)

Toss fresh sliced peaches with sugar and cornstarch and set them aside.

Whisk together all-purpose flour, baking powder, sugar, cinnamon, cardamom, and salt.

Using your hands, a fork, or pastry cutter, cut cold cubed butter into the flour mixture.

Whisk an egg into milk. Pour it over the flour and butter mixture and mix until combined.

Transfer the peaches and their juices to a cast iron pan coated with melted butter.

Spoon the batter over the top of the peaches and spread it out.

Sprinkle the top of the batter with turbinado or granulated sugar.

Bake for 40 minutes or until the top is golden brown and the edges are bubbling.

Cool for 20 minutes then serve with a scoop of vanilla ice cream.  Enjoy!
