Smashed Fingerling Potatoes

Tender fingerling potatoes coated in a garlic butter sauce, roasted until crispy, then topped with parmesan and parsley.


*Fingerling Potatoes *Butter *Oil *Garlic Powder *Salt *Pepper *Parmesan *Parsley

Boil fingerling potatoes until easily pierced with a fork. Drain.

Spread them out on a baking sheet and cut in half any extra long potatoes.

Firmly smash each potato until 1/2 inch thick and the skins crack.

Generously brush each potato with a mixture of melted butter, oil, garlic powder, salt, and pepper.

Roast the potatoes until golden brown and crispy.

While the potatoes are roasting, mix together parmesan and parsley.

As soon as the potatoes come out of the oven, top them with the parmesan and parsley.

Serve warm as is or with dip. Enjoy!
