Soba Noodle Salad

This light and refreshing Soba Noodle Salad with a sweet and tangy miso vinaigrette is a quick and easy recipe that can be made in just 20 minutes!


*Soba Noodles *Purple Cabbage *English Cucumber *Carrots *Parsley *Cilantro *Extra Virgin Olive Oil *Rice Vinegar *White Miso Paste *Brown Sugar *Dijon Mustard *Toasted Sesame Oil

Boil the soba noodles according to the package directions. Drain and rinse with cold water until fully cooled. Set aside.

Meanwhile, whisk together the olive oil, rice vinegar, white miso, brown sugar, Dijon mustard, and sesame oil.

In a large bowl, combine the soba noodles, cabbage, carrots, cucumber, parsley, and cilantro.

Pour the miso dressing over the noodles and veggies and gently toss to combine.

Serve immediately or chill for several hours before serving.
