Strawberry Goat Cheese Salad

A bed of tender baby spinach topped with plump and juicy strawberries, thinly sliced red onion, crumbled goat cheese, and candied walnuts then drizzled with a homemade balsamic vinaigrette.

Gently boil brown sugar, cinnamon, salt, and water for 1 minute.

Add chopped walnuts and toss to coat. Cook another 1 to 2 minutes.

Spread candied walnuts out on parchment to cool.

Meanwhile, whisk together balsamic vinegar, brown sugar, Dijon mustard, salt, and pepper. Slowly add the oil.

Place spinach in a bowl. Top with sliced red onion, sliced strawberries, candied walnuts, and goat cheese.

Drizzle salad with the homemade balsamic dressing.

Serve immediately and enjoy!
