Stuffed Banana Peppers in Marinara

Banana peppers loaded with spicy ground pork, smothered in homemade marinara sauce, and topped with golden brown mozzarella cheese.

Ingredients

*Banana Peppers *Ground Pork *Crushed Tomatoes *Olive Oil *Onion *Garlic *Spices *Mozzarella Cheese

Sauté onions and garlic in oil until softened.

Add canned crushed tomatoes and salt. Simmer over low heat.

Meanwhile, mix ground pork with onion, garlic, parsley, and spices.

Spread 1/3 of the sauce in the bottom of a baking dish.

Stuff the seasoned meat into banana pepper halves and place them on top of the marinara.

Top the peppers with the remaining marinara sauce.

Sprinkle freshly shredded mozzarella cheese over the top.

Cover with foil and bake for 30 minutes. Uncover and bake for another 10. Broil for 2 minutes or until golden brown.

Allow the peppers to cool for about 10 minutes. Top with extra parsley and serve warm. Enjoy!
