Sweet and Spicy Meatballs

Tender mini meatballs tossed in a sticky spicy soy and apricot sauce that is hard to resist!

Combine panko breadcrumbs and water in a bowl and let sit for 1 minute.

Add ground beef, an egg, garlic powder, salt and pepper. Combine with your hands.

Roll 1 tablespoon of the meat mixture into a meatball and place on a foil-lined baking sheet. Continue with all of the meat.

Bake for 12 minutes. The meatballs will be lightly browned and cooked through.

Meanwhile, simmer apricot preserves, soy sauce, and red pepper flakes in a large skillet.

Transfer the meatballs to the sauce and simmer for 1 minute.

Serve over rice for a meal or on toothpicks for an appetizer or party food!
