Twice Baked Mashed Potatoes

Loaded with bacon, cheese, and green onions then topped with more gooey cheddar cheese these creamy mashed potatoes are sure to be a hit!


*Yukon Gold Potatoes *Bacon *Cheddar Cheese *Green Onions *Milk *Sour Cream *Butter *Salt *Pepper

Boil peeled and quartered potatoes until cooked through and soft. Drain

Meanwhile, cook diced bacon in a large skillet until crispy and the fat has rendered. Transfer to a paper towel-lined plate.

Place the pot you cooked the potatoes in back on the stove over low heat. Warm the milk, sour cream, and butter until the butter has melted.

Using a potato ricer or masher, mash the potatoes into the pot with the warmed milk.

Mix in the crispy bacon, half of the shredded cheddar, sliced green onions, salt, and pepper.

Transfer the mashed potatoes to a baking dish. Top with the remaining cheddar cheese.

Bake for 30 minutes or until the mashed potatoes are warmed through and the cheese has melted.

Top with extra bacon and green onions. Serve warm and enjoy!
