BBQ Chicken with Mango Avocado Salsa

Ingredients
  

BBQ Chicken

  • 2 large chicken breasts cut in half lengthwise
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup bbq sauce plus more for serving

Mango Avocado Salsa

  • 2 ripe mangos diced
  • 2 ripe avocados diced
  • 1/2 cup red onion finely diced
  • 1/4 cup cilantro roughly chopped
  • 2 teaspoons lime juice
  • 1 jalapeño finely diced, optional

Instructions
 

  • Combine the garlic powder, salt, and black pepper. Evenly distribute over chicken pieces.
  • Allow the chicken to brine in the seasoning for at least 30 minutes or up to 24 hours before grilling.
  • 30 minutes before cooking pull the chicken from the fridge, coat in the bbq sauce, and keep on the counter.
  • While the chicken is resting, make the Mango Avocado Salsa by stirring all of the ingredients except the avocado in a bowl. Then, gently mix in the avocado just until it is distributed throughout the salsa.
  • Preheat the grill to medium-high for 10 minutes before cooking the chicken.
  • On the hot grill, cook the chicken for 4 minutes, flip, and cook another 4 minutes or until it is cooked through.
  • Serve with the Mango Avocado Salsa and extra bbq sauce.
